Seeto’s pioneering use of local produce and artisan flavours has spurred a new regional Fijian cuisine

Australian Lance Seeto is an award-winning international food & travel writer, author, television presenter and life foods chef, based on Castaway Island, Fiji, in the South Pacific. He is credited with single-handedly igniting a culinary revolution across the country and has been integral in getting its people, restaurants and tourism partners to think differently about Fiji’s tropical island cuisine.  Having left Australia in 2009 in search of new horizons, he has stumbled upon a different perspective of life through the Fijian people, and in the process discovered his own purpose, meaning and a renewed sense of contentment and happiness. Chef Seeto is also the country’s first Culinary Ambassador to the national airline, Fiji Airways, with his signature business class dishes appearing across the fleet and global network.

Seeto’s empathy and respect of native civilizations is born out his Papua New Guinea birthplace, Australian Chinese heritage and a dramatic life changing experience that he is sharing with the world. His Fijian Food Safari Facebook page reaches fans across the globe who follow his journey of life, happiness and a more healthier way to eat from as far away as the Middle East, Egypt, the Americas and Australasia. A highly-anticipated cookbook “Coconut Bliss: Inspiration and the Ancient Foods of Life” is scheduled for a global release in 2015 and tells his personal story of change, intertwined with medicinal food recipes inspired by the traditional South Pacific diet.

Lance is a renowned Executive Chef for the iconic Castaway Island resort in Fiji. His highly acclaimed and pioneering dishes have attracted a global following of gourmet foodies and food journalists who say he has cleverly used traditional artisan techniques of Fiji and infused them with the age-old philosophy of eating food as medicine. His “1808″ Fijian Asian restaurant has been nominated for “Best Restaurant” in the forthcoming 2013 AON Fiji Excellence in Tourism Awards in February 2014.

As an accredited member of the International Food Chef Lance SeetoWine & Travel Writers Association (IFWTWA), his articles appear globally online, in regional newspapers and tourism and inflight magazines across Australasia and the South Pacific. His popular Fiji adventure cooking series “Taste of Paradise” is now in its 3rd season and is syndicated across the South Pacific in 13 island nations. It has ignited a passion for Pacific islanders to learn healthier ways to cook, eat and enjoy food as the region learns how to deal with increases in diabetes, heart disease and cancers.

Lance is also one of the few chefs who has embarked on training in nutritional medicine and biochemistry as a member of the world-renowned Australasian College of Nutritional & Environmental Medicine (ACNEM) in Melbourne. This knowledge has given him a deeper understanding of the body’s inner mechanics, cell structure and physiology, and what is missing in the Western diet that is causing much of today’s non-communicable diseases.

His inspiring and motivational vision of what is wrong with the world and the modern diet has changed the lives of many of those who have met this down to earth chef. Nearly all agree. Seeto has been nominated for multiple Tourism Fiji awards recognizing his pioneering food and support to the tourism industry.
