I don’t care what anyone says. My mum makes the best banana cake! My childhood bias developed a love for her fluffy moist banana cake recipe and I have been using this recipe for near three decades. Once baked, add a butter cream or cream cheese frosting and I guarantee you can’t go past just one slice. Enjoy from my family.
250gm/10oz butter | |
250gm/10oz white granulated sugar (caster) | |
375gm/13oz self raising flour | |
4 eggs | |
2 teaspoon bicarbonate soda | |
1/2 cup milk | |
1 cup ripe bananas, mashed | |
pinch sea salt |

1. | Cream butter and sugar, gradually add eggs |
2. | Beat in mashed bananas |
3. | Dissolve bicarb soda in milk, stir well |
4. | Add flour and milk alternately until all ingredients are mixed well |
5. | Pour into 8x10 |
6. | Baked at 180C/350F for approx 25-30 mins. Use a skewer to check batter is cooked |
7. | Transfer to a wire rack to cool |
8. | Coat with a sweet butter cream and serve! |
